White Hut – Springfield, Massachusetts
If there’s one restaurant that epitomizes resurrection, it’s White Hut in Massachusetts. The simple, counter-service diner, which opened in 1939, closed in February 2020, much to the chagrin of foodies. However, it was purchased and reopened six months later in August, and it returned stronger than ever. That’s a good thing because it would be a pity if their grilled onion-laden burger patties were no longer available.
